Gluten-Free Dandelion Fritters the Kids Will Love!

Foraging with children is one of my favorite things to do and here in Michigan the wildcrafting season is in full swing! The chickweed, purple dead nettle and plantain are begging to be picked, but the real star of our yard right now is the sunny Taraxacum officinale – dandelion!

Every part of dandelion is edible and packed full of vitamins and essential nutrients. We gather their roots in the fall, leaves and blossoms in the spring. After a long winter here in Michigan, we need all the help from our plant friends that we can get. But honestly the kids don’t really care about the health benefits – they are in it for this delicious golden treat!

I’ve tried a lot of combinations, but this gluten-free dandelion fritter recipe (with a side of dandelion butter) has been is the most loved. If you try it out, let me know how it worked for you and your family!
